Beef Stew Recipe - St. Ben's Meal Program

Please note: St. Ben's furnishes guests with forks and spoons only -- no knives. Please ensure that meat and vegetables are cut into small pieces that do not require further cutting. Hint: Try slicing frozen meat that is slightly defrosted but still crystalline on the surface. According to one stew preparer, it cuts 'like butter!'

No-Brown Beef Stew

10  lb lean stew meat
10  lb potatoes
6  lb carrots
5  cups celery
15  Tablespoons instant tapioca
5  tablespoons brown sugar
10  teaspoons salt
10  cups tomato juice

  1. Place meat and sliced vegetables into a large Nesco roatster or 2 oven roasting pans.
  2. Combine tapioca, brown sugar, and salt. Stir into meat and vegetables.
  3. Pour tomato juice over all. Stir.
  4. Cover and cook in a 250-degree oven for 7-8 hours or until done, stirring once or twice.

Note: No need to brown meat, but if you choose to do so, try browning in the oven, and reduce your overall cooking time.
